SALTED CAKE WITH CHESTNUT FLOUR
Have you ever used the chestnut flour for the salted cake? The chestnut flour is an excellent alternative at flour 00, you can make infinity tasty dishes with it.
200 gr of ricotta; 100 gr of chestnut flour; 100 gr of flour 00, 100 gr of smoked bacon, 30 gr of padano flour, 20 gr of fennel, 3 eggs, 1 leek, 5 ment leaves, oil, salt and pepper as per your taste.
To prepare the dish unite the flour 00 with chestnut flour, the butter (cut into the pieces). Put all into the mixer and blend until a crumbled mixture is obtained. Now mix an egg into the mixture and a pinch of salt. You have to get the blend of mixture well obtained. Put the mixture into the fridge for relaxing for 1 hour.
In a pan put pancetta to get the brown color for few minutes and then mix the leek into it (clean and cut into rounds). When it is cooked then let it cool down for few minutes.
In a container put together the ricotta, the left eggs, the ment and the fennel, padano wheat (chopped), the leek and the bacon. Mix it all well and adjust the salt and the pepper.
Roll out the dough with a rolling pin until the dough is 2-4mm thick. We transfer the dough into the round mold (lined with parchment paper), prick it with a fork and transfer our delicious dish is full now.
In pre-heated oven for 45 minutes. Temperature 180 °.
